- Foie gras foire, Caunes-Minervois, Aude département, held on the first Sunday after October 11th each year. Caunes-Minervois is a medieval village with twisting narrow streets built of stand stone. Its medieval abbey dates from the 8th century. Many buildings were modernised in the renaissance. It is set in the Minervois vineyards of the Montagne Noire.
- Cattle Fair, Espezel, Aude département. One of the most well known fairs in the region. Every year on the last week end in October the normally tiny village of Espezel in the Plateau de Sault hosts a great agricultural fair. The main features are animal shows where the next generation of stud Gascon cattle are judged and the famous plateau de Sault potatoes are tasted and sold. This fair is off the beaten track and very popular with the small farmers in the region.

Festival of Chestnuts, lamb and wine, location : Villardonnel, Aude département. takes place on the Saturday and Sunday before Toussaints (=hallowe'en=end of October). This festival has existed for 30 years and celebrates the local chestnuts, Cabardeés primeur wine and the local lamb that is served grilled at the Sunday fair. Villardonnel is a small village but 5000 people visit for this festival. On Saturday there is a little ball with a band and a meal for which tickets need to be bought in advance. The fair lasts all of Sunday. The atmosphere is friendly with many different types of stands and entertainment such as juggling and musical performances.
